This simple recipe depends really on the quality of shrimp you will manage to get. The fresher the better. The ingredients only slightly enhance the delicate flavor of the crustaceans.
500g/1lb jambo shrimp
Juice of 1 lemon
½ cup olive oil
Salt and pepper
Rinse the shrimp; carefully remove the antennae, leaving the shrimp intact. Place in a skillet and pour the full bottle of wine on top. If it does not at least nearly cover the shrimp, add water. Boil until done. Then drain.
To make the sauce, chop the mint (about ½ cup of leaves), then combine with olive oil, lemon juice, salt and pepper.
Drain the shrimp and place in a bowl, then pour the dressing on top and leave to rest for about 20-30 minutes before serving.
