Salt cod fritters

This recipe would typically be prepared with the salt cod; since it is rather difficult to obtain, I tried with fresh cod fillet, and it worked out really well.

2 cups flour
1 tsp. sugar
30g/1oz yeast
1 ½ cup milk
1 kg/2lb fillet of cod fish
Salt and pepper
Frying oil

Cooking instructions

Dissolve the yeast in ½ cup warm milk; then add ½ cup flour and sugar, stir to combine. Cover and leave in a warm place for the yeast to prove, for about 30 minutes.

Meanwhile cut the cod fish into irregular chunks; start heating the oil.

Next combine the rest of the flour and milk with the yeast mixture. Season with salt and pepper.

Dip each chunk of fish in the prepared dough then immediately place in the hot oil. Fry until golden brown.

Dry on paper towels and serve with lemon wedges or tomato sauce.
