500g quark or fromage blanc
A bunch of various fresh herbs including:
Basil, thyme, oregano, rosemary, mint
For the dough:
3 large eggs
50g dried thyme
Wash the herbs and separate the leaves from branches. Run the quark (white cheese) and herbs through a meat grinder. Then season with salt and a lot of pepper and mix well.To make the dough, combine the dried thyme and eggs and let stand for at least an hour. Then mix with flour, knead and stretch to make ravioli, using a chosen technique.
