Lavender noodles with goat cheese

INGREDIENTS:

200g goat cheese
2 tbsp butter
1 tbsp flour
1 cup milk
lavender powder
blueberries
pine nuts

for the dough:
50g blueberries
3 tbs lavender powder
50g fresh baby spinach
2 eggs
500g semola di grano duro

Cooking instructions:

To make the noodles, you need to divide the flour in half. One half combine with lavender powder and 110g of blueberry and egg mixture (blended) and the other with 100g of spinach and egg mixture (blended). Knead to combine. Then either press the noodles out combining the colors one after another, or stretch one color, then the other, combine the sheets and press to make two-sided noodles.

Melt the butter and whisk the flour in. Then add milk and about 50g of the goat cheese. Whisk until smooth, adjusting the milk.

Cook the noodles, rinse and arrange on the plates. Pour the goat cheese bechamel on top. Decorate with more cheese, lavender powder and blueberries.
