3 medium eggplants
4 cloves garlic
2 tsp. chopped fresh oregano
Salt and pepper
Using a sharp knife or a cutting machine slice the eggplant lengthwise. Sprinkle with salt and leave to rest for about an hour.
After the eggplant releases water, pet dry with a kitchen towel.
Brush olive oil on one side of the eggplant, and place on a preheated grill. Then brush the other side. Cook until nicely browned on each side, for about 10 minutes.
Combine about ½ cup of olive oil with mashed garlic cloves and salt. Arrange grilled eggplant slices on serving plates. Brush with the olive oil and garlic mixture then sprinkle with oregano. Season with freshly ground black pepper. Serve as an appetizer.
