This healthy and refreshing salad is prepared with Grana Padano cheese, popular in Piedmont and Lombardy. It could be substituted with Parmesan cheese, which is similar in taste.
300g/10.5oz. fresh spinach
4 tbsp. olive oil
Salt and pepper
Grana Padano cheese
Wash the spinach, then place on a kitchen cloth and let it drain and dry. Next distribute the leaves between four glass serving bowls.
Wash the pears, cut the stems off, then cut in half. Slice the pears lengthwise. Place the nicest slices aside, about 3 for each bowl. Dice the rest.
Arrange the pears on top of the spinach – first the dice then the slices.
Wash the lemon and treat the skin with boiling water. Then cut out four nice slices for garnish. Squeeze the juice out from the rest and place into a bowl. Combine with olive oil, some salt and pepper. Sprinkle on top of each salad.
Garnish with some grated cheese and serve.
