Cucumber salad with thyme

This lovely salad is based on the divide combination of feta cheese and cucumber in the famous Greek Tzatziki. 


3 larger greenhouse cucumbers

A handful of fresh thyme

200g/7oz feta cheese

Olive oil

Juice of ½ lemon

Salt and pepper

Cooking Instructions:

Wash the cucumbers; peel and grate two of them. Then add some salt and leave it for about 10 minutes.

Meanwhile, using a very sharp knife or a cutting machine slice very thinly the remaining cucumber. Arrange in a circle on serving plates.

Drain the water well from the grated cucumbers. Add the lemon juice, ½ of the chopped thyme and a few drops of olive oil. Stir to combine. Then place in the middle of the cucumber circle on serving plates.

Next dice the feta and arrange on top of the grated cucumber mixture.

Sprinkle everything with olive oil, freshly ground black pepper and the remaining chopped fresh thyme.

You can accompany the salad with some toasted bread sliced with garlic and olive oil.
