Cod fish with raisins

This sweet and sour Sicilian sauce with raisins is absolutely spectacular, served with fresh cod fish. It is better to use fillet with skin on, as it will keep the flaky fish together, preventing the meat from falling apart.


1kg/2lb cod fish fillet, skin on
1 onion
Green parsley bunch
5 cloves garlic
½ cup raising, presoaked
2/3 cup canned tomato

Cooking instructions:

In a skillet, heat some olive oil. Sauté briefly chopped onion, chopped green parsley and garlic. Next add the canned tomato and presoaked raisins with the water. Stir to combine, let it simmer briefly then season with salt and pepper.

Add about ½ - 1 cup water and arrange serving pieces of cod fish on top, skin down. Lower the heat, cover and let it cook for about 10 minutes. Next turn the fish around, uncover and cook until some of the liquid evaporates and the sauce thickens.

Carefully remove the skin, leaving the pieces of fish intact. Serve and enjoy!
